I use a lot of eggs, because I long ago swallowed the propaganda campaign of Big Egg about the “incredible, edible egg.” I cook them fried (up and over easy), scrambled, poached, boiled, in omelettes, several styles of breakfast burritos, as an ingredient for other complex dishes, and even cooked in an air fryer. (Aside: if Ronald Reagan came back and was a contestant on a Food Network cooking show, he’d say, “Trust—but air fry!” I love my air fryer!) It also helps that the cholesterol campaign against eggs many years back was completely wrong, like a lot of official government help advice. I’m awaiting the latest directive from RFK Jr. on this.
The price of eggs is a cause celebre at the moment, the result of bird flu effects on the chicken and egg industry. Turns out that when it comes to bird flu, it doesn’t matter which comes first.
Somehow, though, everyone seems to think eggs should be immune from the basic economic law of supply and demand. But they’re not (though not sure why this chart is from 2022 data):
